Originally developed for market growers in Copenhagen, Denmark, this cabbage quickly made its way to the US market. The Copenhagen Market cabbage produces large, round heads that measure 6-8 inches in diameter. It has beautiful blue-green leaves with a white center, and its tightly-wrapped, compact heads develop early and typically weigh around 3-4 pounds. Additionally, it's a long-storing variety, making it perfect for preserving and use throughout the year.
