The Cucurbita maxima is a vining plant that produces Pink Banana squash, which gets its name from its pinkish skin and elongated, slightly curved fruits. These giant squashes can grow up to 3ft long and weigh up to 50 lbs. However, Pink Banana squash is not just for display! It has yellow-orange, firm, sweet flesh that is reminiscent of butternut squash and can be used as a replacement in cooking. Additionally, if harvested early enough, Pink Banana squash can also be consumed like summer squash. The vines of Pink Banana squash can grow 10-15 ft long. The seeds of this plant have been traced back centuries ago to Peru and were eventually introduced to the market in 1893.
