Cynara cardunculus is a captivating herbaceous plant that is primarily cultivated for its delectable, purple-tinted flower buds. However, it is also highly valued as a unique addition to landscape gardening. These 3-5' tall plants produce 3-5 flower buds per plant after approximately 75 days from transplant. The edible flower buds grow on tall stalks, and if allowed to bloom, they open into a fascinating purple flower resembling a giant thistle. The grey-green foliage also adds interest to the garden throughout the season. This cold-hardy variety is productive in zones 3-11.
To grow, start indoors 8-12 weeks before the last frost date. Transplant the seedlings outside after the last frost into fertile, deep, and loose soil. The plants require a chill period to produce artichokes. Harvest the flower buds when they are at their fullest but before they begin to open. Once established, water the plants when the top 2 inches of soil becomes dry.
