Tomatillo (Physalis ixocarpa) is a highly productive plant that produces stunning purple-colored fruit with a sweet and fruity flavor. These fruits are much sweeter than the green varieties and can be eaten right off the plant or used to create show-stopping salsas. Tomatillos are related to tomatoes, and while they have similarities, they can withstand much more heat and drought. The plant bears large fruit encased in a papery shell. Each plant can produce about 1 lb of 2-4 oz. fruits. Consider growing tomatillos this summer and use them for canning your own homemade salsa!
