A lovely Italian heirloom from before 1840, the Chioggia beet (pronounced kee-OH-gee-uh) is also known as the Candy Cane or Bullseye Beet. It is best known for its eye-catching deep pink and white spirals, which provide salads or soups with a lovely splash of color.
The Chioggia beetroot matures quickly and has a mellow, sweet flavor. Also, this kind "bleeds" less than other beetroot varieties and won't overly color your other ingredients. The green tops, which have a pink stem with pink stripes, can be eaten like spinach.
